Candor is the creation of Giuseppe Ciuffa, one of San Diego’s most established chef-restaurateurs and the founder of Giuseppe Restaurants & Fine Catering. Drawing on his Italian roots, Ciuffa built the concept around straightforward, ingredient-driven cooking, “candor” in its purest form. His culinary philosophy is shaped by a lifetime of hands-on experience, beginning on his family’s farm outside of Rome. There, he learned to cook alongside his mother using seasonal produce, local cheeses, and fresh seafood from nearby coastal villages. Those early influences continue to guide his approach today, focusing on balance, authenticity, and the power of simple, well-crafted dishes.

With an “everything-made-in-house” credo, Candor takes pride in sourcing from San Diego’s local farmers and fishermen. Much of the produce comes directly from the La Jolla Open Aire Farmer’s Market, just a short walk away. This dedication to fresh, local ingredients ensures that the menu evolves with the seasons, offering something new throughout the year while maintaining a sense of familiarity.

The restaurant’s menu highlights both comfort and creativity, beginning with approachable starters that showcase honest flavor. The Hot & Crispy Tomato Bread, topped with whole roasted garlic and cold-pressed olive oil, is deceptively simple yet deeply satisfying. The prime beef carpaccio, finished with wild arugula, capers, shaved Parmigiano, and lemon, offers a bright, refined start to the meal. Another favorite, the marinated shrimp al ajillo, combines Calabrian chili, lime, and a butter-garlic sauce for a flavorful nod to the chef’s Mediterranean background.
